Not Every Strawberry Variety Is Suitable for Freeze-Drying
 

A strawberry variety that performs well in the fresh market may not always be suitable for freeze-dried products.

Fresh-market strawberries are often selected for shelf appearance, transport resistance and immediate eating quality. Freeze-dried strawberries must also maintain acceptable color, aroma, structure and cutting performance after processing.

When evaluating a variety, we pay attention to the following points.

  • Natural Color

The fruit should have an even red color with limited white shoulders or pale internal areas.

Color is especially important for freeze-dried strawberry slices, halves and whole fruit because the finished product is often used directly in cereal, chocolate, bakery and snack applications.

The fruit should be firm enough to withstand washing, trimming and cutting.

How Do We Screen Strawberry Varieties?

We do not select a commercial variety based on one field inspection or one laboratory result.

The screening process normally includes several stages.

1. Field Evaluation

During the growing period, our agricultural team records plant development, fruit setting, harvest period, fruit size and field stability.

The purpose is to understand whether the variety can support regular commercial harvesting.

2. Harvest Sample Review

Fruit samples are collected at different maturity stages.

We compare color, firmness, sweetness, aroma, fruit shape, internal condition and processing loss.

3. Trial Processing

Selected samples are washed, trimmed and processed into the required formats, such as:
