How We Manufacture Freeze-Dried Strawberries for Different Food Applications?

Cleaning, Trimming and Size Preparation

After raw material approval, the strawberries are cleaned and trimmed.

Leaves, stems, damaged areas and unsuitable fruit are removed. The accepted strawberries are then prepared according to the order.

  • For whole products, we focus on fruit size and shape consistency.
  • For slices, the fruit must be suitable for even cutting and maintain a recognizable strawberry appearance.
  • For dices and pieces, cutting size and broken-piece control are more important.

Each format is handled separately rather than using one cutting setting for every product.

 

Pre-Freezing and Tray Loading

Prepared strawberries are frozen before entering the freeze-drying system.

The freezing condition and tray loading arrangement affect the drying result. If the product is overloaded or arranged unevenly, moisture removal may become less consistent.

During loading, we consider:
